Meanwhile, obviously I didn't get any grocery shopping done amidst the wedding business so this week is testing my ingenuity a little. Last night I went for an old standard: Baghdad Eggs. No, they do not explode. They are eggs fried in butter, garlic and lemon juice and served with freshly crushed cumin seeds and mint. Excellent old standby from Stephanie Alexander in times of desperation. Tonight I didn't get in till past 7 and by that stage takeaway looked like an awesome option but sadly I had defrosted lamb fillet that was begging to be used. And very little else. After some rummaging, I discovered half a red onion, half a yellow capsicum and some last chance tomatoes. Hmmmm... next? Well is there anything a griddle pan can't do? I griddled the vegetables slowly with a little oil and mixed them through some pasta. Then, I rubbed down the fillet with za'atar and griddled it. Griddle griddle griddle I went. Served the lamb on top of the pasta and warm vegetables and felt vaguely smug and very satisfied.
