Larping About

Ok, that was a dad-joke. I've had an most satisfactory night in: thorough reading of the Good Living section for this week, some general life-organisation and an episode of Dexter which I think I'm really going to like in an unsettling kind of way. In the middle of all this I hit up Thai Food for another recipe, this time larp gai. My version was a little bit altered - I used normal shallots instead of red ones  (Thompson indicates that it's not a major difference and I couldn't find them) and I was also sans long-leaf coriander and mint. In the latter case I just wrongly assumed there'd be mint at the bottom of my bottomless crisper. So that left chicken thigh mince seasoned with salt and garlic and then simmered in a pan with stock, lime, ground chilli, fish sauce, coriander, sugar and ground roasted rice and served with roti from the Fiji Market on south King Street. The Fiji market is a dark den full of spices, indian cooking equipment, mexican groceries, bollywood dvds, more spices and bright embroidered fabrics. The enormously fat and old resident cat has recently moved out but there's now a smaller tabby who divides his time between sleeping in the window and stalking the customers. They make roti daily and it freezes beautifully. I've also been exploring my local asian grocery store; it's a quick way to feel incompetent and ignorant but the staff are very patient. The larp gai was supposed to taste "hot, sour and salty" - check to all of the above in the best possible way. The ground roasted rice was interesting; it's simply dry-fried and ground up with a mortar and pestle thus providing binding, textural interest and a release for any stray aggression you might be carrying around.
