This afternoon I was feeling a bit Sunday-afternoon-and-there's-still-quite-a-lot-of-marking and gloomily considering a return to the highly dubious 'kisses' and cul de sacs of RSVP so I decided the only thing to do was bake the peanut butter cookies in the June Delicious. Ladies and Gentlemen - that's the kind of logic that necessitates six gym sessions a week.
It was a very forgiving recipe and needed to be as I went on to misread just about every direction in it including putting in an extra half cup of sugar that needed to be fished out (belated compensation?) and neglecting to cut up any of the peanuts that went into it. White and brown sugar, flour, butter, egg, vanilla, peanut butter and peanuts. The dough was rolled into a log and refrigerated to firm it up enough to cut slices and bake them - this is my favourite way of dealing with the whole dough to biscuit issue - it's neat, easy and satisfying. The resulting cookies are a wonderful golden colour and leave a healthy sheen on anything they touch - they pass the H. Simpson test with aplomb.
