Week-night dining


Last night I conducted another experiment from 1080 Recipes - I'm really taken by this cook-book and it is so pretty! Have a a look at the picture above. The whole book is illustrated with these beautiful coloured drawings; some pages just have a suggestive sketch in the corner, others look as though the artist has daydreamed a dinner party into existence. The recipes are also practical, good and interesting. I discovered a good weeknight dish in Arroz con carne Picada: Rice with mince. This worked like a heavy handed and slightly backwards risotto; you cooked onion, green capsicum, fresh tomato and mince in oil, then added paprika and rice, poured in stock and let the rice sit to absorb the liquid. I found myself adding a fair bit of salt and pepper to the dish but I'm a bit of a salt fiend. It was a quick process and leftovers were good, if not better.
And to first anonymous (but not very!) question, the apple was raw in the Fantasy Salad. Huzzah!
